Tomatoes are in season and taste better than ever! If you’re looking for a creative way to use up tomatoes this season, try making a bruschetta burger!
You will need:
Tomatoes
Basil
Mozzarella (sliced)
Balsamic vinegar
Olive oil
Salt and pepper
Hamburger
Bun
Garlic
Shallot
Mince the tomatoes, basil, shallot, and garlic and add to a large bowl. Drizzle olive oil and vinegar to your taste. Add salt and pepper. Mix together and let this sit for at least 10 minutes.
Cook burgers.
Top your cooked burger with the bruschetta mixture and slice of mozzarella cheese on a soft bun.
I served my burger with tater tots (classic), but you could elevate this by serving roasted carrots or sweet potato fries with a spicy ranch dipping sauce.
