Breakfast in a Cup


The menu at my favorite breakfast dive

Breakfast in a cup is a quintessentially southern thing. In its most basic form, breakfast in a cup is a cup of grits, topped with an egg and possibly meat. The beauty of this breakfast is how versatile it is- you can fill that cup with anything you like. Grits + crispy ham + scrambled egg? Yes. Grits + sausage crumbles + runny egg? Yes. Oatmeal + fried eggs + bacon? Yes!


Anything goes with breakfast in a cup- if it’s easy to prepare and delicious to eat, add it to the cup.


Mix it together for maximum delicousness

Here are a few of my favorite combos:

  • Grits + fried egg + bacon + cheddar cheese

  • Grits + scrambled eggs + sliced avocados + crumbled bacon

  • Grits + turkey sausage crumbles + sauteed green beans (Weird? Maybe, but crazy delicious!)

  • Oatmeal + crispy ham pieces + a sweet chutney of some kind (Get your sweet/salty on!)

You can make the grits in the crock pot if you have time, and dip them out in cups in the morning. Breakfast in a cup is always a big hit at buffet style brunch gatherings!
