Blueberry Cobbler


Blueberries ready for cobbler!

Cobbler is a staple in southern homes and is such a delicious use of the bounty of beautiful spring and summer fruits. This recipe works for most any fruit that isn’t too hard, like peaches or blackberries.


For the berries:

8 cups of fresh blueberries

⅔ cup of sugar

1 tablespoon of fresh lemon juice

½ teaspoon of lemon zest

¼ cup of flour

  1. Butter a baking dish.

  2. Mix all of the above ingredients and spread evenly into the buttered dish.


For the dough:

2 ½ cups of flour

2 tablespoons of sugar

1 tablespoon of baking powder

½ teaspoon of salt

1 ½ sticks of butter cut into small pieces

¾ cup of milk

1 egg

  1. Combine the dry ingredients in a bowl and whisk to mix.

  2. Add the butter and cut it in using a pastry blender, fork, or knife. Mix until the butter is well distributed.

  3. Mix the egg and milk. Slowly add to the dry ingredients and mix until it just comes together.


Dough ready for the oven

Assembly:

  1. Tear off pieces of the dough and place them on top of the berries, giving it a “cobbled” effect. Sprinkle about 2 tablespoons of sugar over the dough.

  2. Cover with foil and bake at 425 degrees for 20 minutes.

  3. Remove the foil and continue cooking about 20 minutes more, or until it is golden brown and bubbly.
