Biscotti has always seemed like something that is easier to buy than to make, until I tried it myself! It isn’t really hard but it does take a lot of steps and a good amount of time. The end result is delicious and worth the effort! Here’s my first try at making homemade biscotti:
Biscotti with Cranberries and Walnuts
½ cup of oil
1 cup of sugar
¾ cup of flour
3 eggs
1 tablespoon of baking powder
1 tablespoon of vanilla extract (or almond extract, whichever you prefer)
½ cup of dried cranberries
½ cup of chopped walnuts (or pecans or any nut you prefer)
Preheat oven to 375 degrees. Grease a baking sheet and set aside.
Mix all of the ingredients in a mixing bowl until blended.
Divide dough in half and form each half into a flat-ish log almost the length of your baking sheet.
Bake the logs for about 25 minutes, or until they are very lightly browned and set.
Remove from the oven and allow to cool completely.
Using a serrated knife, cut each log into about 1 inch pieces.
Lay each piece, cut side down on the baking sheet, return to the oven.
Bake about 15-20 minutes, or until you see the pieces just beginning to brown slightly.
Remove from the oven, turn each piece over and return to the oven.
Bake again for about 15-20 minutes, or until you see the pieces just beginning to brown slightly.
Cool completely. Store in an airtight container.
Enjoy with a delicious cup of coffee or tea! Biscotti is meant to be hard-ish so you can dip it in your coffee or tea.
