Bibimbap

Mmmm bibimbap!

I recently attended a conference in downtown Atlanta. If you’ve ever been there, you know that Atlanta has more delicious restaurants than you can shake a stick at! It is a true southern melting pot with foods from many different cultures and places. A few years ago I saw bibimbap on the Food Network and I knew I had to try it.

Bibimbap is a Korean dish that traditionally mixes rice with chili pepper paste, seasoned vegetables, and some sort of meat (a sliced fried egg is also a common addition). The beauty of bibimbap is that you can mix virtually anything you like into it.

The bibimbap I tried featured warm rice, fresh spinach, julienne carrots, julienne cucumbers, sliced fried egg, bulgogi beef, green onions, sriracha, and diced daikon. It was soooo delicious! I loved the way the cooked rice and beef played off the raw vegetables. This dish was a mashup of textures and flavors (it had everything from salty to sweet!) that I adored. I think kimchi would be a great addition to this bowl, and I think you could easily sub in fried tofu for the bulgogi if that’s more your speed. Bean sprouts would be yummy too!

Trying new foods is one of the great joys in life- I encourage you to leave your comfort zone whenever the opportunity arises. You will experience many wonderful dishes!

Extra chili sauce and soy sauce on the side!
