Banana and Oatmeal Muffins


Yumm! The perfect breakfast when you're on the go!

These muffins are filled with delicious ingredients to start your day!

  • 2 ½ cups of oats

  • ½ teaspoon of ground nutmeg (fresh is best)

  • ½ teaspoon of ground cinnamon

  • ½ teaspoon salt

  • ½ teaspoon baking powder

  • 1 cup of chopped pecans

  • ¼ cup of olive oil

  • ⅓ cup of honey

  • 2 eggs

  • 1 teaspoon of vanilla

  • ¾ cup of milk (any variety)

  • 2 bananas, peeled and diced

  1. Preheat the oven to 375 degrees. Line a muffin tin with paper liners and spray then with cooking spray.

  2. Pulse half of the oats in a food processor - this becomes the flour. Add the remaining dry ingredients and ½ of the pecans. Stir to combine.

  3. In another bowl, beat the eggs and add all of the remaining wet ingredients.

  4. Combine the wet and dry ingredients and mix with a spoon. Stir in the bananas.

  5. Divide the batter among the paper lined muffin tin and top each with the remaining pecans.

  6. Bake about 25 minutes.

When cool you can toss these into a ziplock bag and store them in the freezer for a future breakfast! YUM!
