Asian Inspired Beef and Rice

This is a quick and easy week night dinner that is filling and healthy. You can add additional vegetables, if you like, or spice it up with fresh jalapeños.




Asian Inspired Beef and Rice

  • 1 1/2 pounds ground beef or ground chuck, or ground beef

  • 1 tablespoon fresh chopped basil

  • 2 tablespoons fresh chopped cilantro

  • 2 limes, i juiced, i cut into quarters

  • 2 cups shredded carrots

  • 2 tablespoons sliced green onions

  • 2 tablespoons soy sauce

  • 1/2 teaspoon crushed red pepper (optional), or more to suit your taste

  • 1 jalapeño pepper, thinly sliced (optional)

  • Salt and pepper to taste

  • 2-3 cups hots cooked rice of your choice

1. Cook the rice and keep warm.

2. Brown the ground meat until cooked through, drain and return to pan.

3. Add the carrots to the meat and cook for just a few minutes to warm them and cook them slightly (you want them to be crispy).

4. Add the lime juice, basil, half the cilantro, soy sauce, red pepper flakes (if using), and salt and pepper. Cook until everything is nice and hot.

5. In a bowl, place a scoop of rice, top with the meat. Garnish each bowl with the remaining cilantro, a few green onions, a few slices of fresh jalapeño, and a slice of lime.



The last time I made this dish my grocery store was out of fresh cilantro and fresh jalapeños. I substituted serrano peppers, which are much hotter, but we never mind spicy in our house!

In the produce department our grocery store sells fresh herbs in the form of a stir-in paste (see picture here) and these are a good substitute for fresh too! Explore and find what you like!!
