I don’t care for most jarred salad dressing so I often just toss a variety of herbs, olive oil, and vinegar into my mini-food processor and make a quick salad dressing. I created this one recently because my husband had been to Costco and returned with the motherload of jarred artichokes and I needed to find a way to use them. It’s easy and different, plus artichokes are very good for you!
1 cup of artichokes, drained
2 tablespoons of lemon juice
5 cloves of garlic
¼ cup of white wine vinegar
¾ to 1 cup of olive oil
Salt and pepper to taste
Put all ingredients into a food processor and swirl around until it is smooth.
Add additional olive oil to reach the consistency you desire for dressing.
Pour into a jar and refrigerate.
This is also delicious as a topping for grilled fish or roast chicken.
