Artichoke Dressing


Finished product, ready to make things more yummy!

I don’t care for most jarred salad dressing so I often just toss a variety of herbs, olive oil, and vinegar into my mini-food processor and make a quick salad dressing. I created this one recently because my husband had been to Costco and returned with the motherload of jarred artichokes and I needed to find a way to use them. It’s easy and different, plus artichokes are very good for you!


  • 1 cup of artichokes, drained

  • 2 tablespoons of lemon juice

  • 5 cloves of garlic

  • ¼ cup of white wine vinegar

  • ¾ to 1 cup of olive oil

  • Salt and pepper to taste



  1. Put all ingredients into a food processor and swirl around until it is smooth.

  2. Add additional olive oil to reach the consistency you desire for dressing.

  3. Pour into a jar and refrigerate.


This is also delicious as a topping for grilled fish or roast chicken.
