This recipe was given to me by my sis-in law, by way of her neighbor (named Mrs. Turner), and now given to you by this Mrs. Turner. It is easy to make and delicious to eat!
Apple Cobbler Cake
Preheat the oven to 350 degrees. Grease and flour a bundt pan and set it aside until ready to fill with the cake mix.
Blend together:
1 cup of vegetable oil
2 cups of sugar
3 eggs
2 teaspoons of vanilla
Sift together:
3 cups of flour
½ teaspoon of salt
1 teaspoon of baking soda
Add, in step 2:
3 cups of chopped apples
1 cup of chopped pecans or whatever nut you prefer
-When the wet ingredients are well blended, gradually add the dry ingredients to the wet ingredients.
-Fold in the apples and nuts.
-Pour the batter into the prepared bundt pan.
-Bake for 1 hour or until a toothpick inserted into the cake comes out clean.
-Cool the cake in the pan, on a wire rack for 30-45 minutes. Turn the cake out and allow to cool completely.
We like the cake just as it is but the original recipe includes the following optional sauce that is poured over the hot cake.
Optional topping:
1 cup of brown sugar
1 stick of melted butter
¼ cup of milk
Mix these ingredients and pour over the cake while it is still warm.
A few months ago I attended the funeral of my 97 year old aunt. She was the last of that generation. This was a cake that she would occasionally request from my sis-in-law. Whenever we eat this cake we will always smile and think of her. To all of our family, this will always be known as Aunt Tootie’s Apple Cobbler Cake. Enjoy!
